If you're using release R2014b, take a look at the HISTOGRAM function.

x1 = randn(1, 1e5);
x2 = randn(1, 1e5);
x3 = randn(1, 1e5);
h1 = histogram(x1, 'FaceColor', [0.2 0.2 0.2]);
hold on
h2 = histogram(x2+3, 'FaceColor', [0.5 0.5 0.5]);
h3 = histogram(x3-3, 'FaceColor', [0.8 0.8 0.8]);
